Based on scientific studies, we have designed test strips of a synthetic foam which has a very similar texture to meat fibers. The way the strips are cut during the test accurately shows the quality of blade. If the test strip has been cut as far as the green area (and the green area has been entered) your knife cuts properly. If the green area has not been reached the knife being tested does not cut well enough and should be resharpened.
