Our maintenance advice knives
MyD Knives have been made with the greatest care in our workshop in Thiers, France : their manufacture, individualized and personalized, requires a manufacturing time of 10 working days before each shipment. Very minor variations may occur during production, which we kindly ask you to accept. In the event of more significant variations, you will be the subject of a specific notification.
We hope they bring you the greatest satisfaction and accompany you in your culinary work for many years to come. Please find below some advice on their use and maintenance.
MAINTENANCE
We recommend that you wash your knives immediately after use, with hot water, washing-up liquid and a sponge, then rinse them with clean water. Wipe your knives with a soft, dry cloth. In order to preserve the blades, we recommend that you never use the abrasive side of the sponges.
MAINTENANCE OF WOODEN HANDLES:
Wood is a so-called "living" material: its color can fluctuate over time, depending on use, maintenance and the care taken.
Your knife with a wooden handle requires special maintenance: we advise you to avoid prolonged passages in water, to wipe it carefully with a clean, dry cloth after cleaning and to treat it regularly to prevent it from becoming patina. You can occasionally use linseed oil for this. Place a few drops of oil on a clean cloth, run it evenly over your knife handle, leave for about 15 minutes, then wipe with a soft cloth.
We remind you that each wood is unique according to its color, its grain, its burls or brambles ... Also, when you purchase a knife, even if the selected wood species is identical, the handles knives may vary from piece to piece.
CAN A STAINLESS STEEL BLADE RUST?
To be able to cut well and for a long time, a cutlery steel must contain a high proportion of carbon (between 0.5 and 1%). Despite all the precautions taken during the manufacture of the knife, it is impossible to guarantee total stainless steel.
In contact with a strongly saline environment, in the event of improper adjustment of the dishwasher, in the presence of water with a low pH (less than 7), or certain liquids (vinegar, cola, etc.) small oxidation points may appear on the slide.
We recommend that you avoid leaving your tools in contact with moisture and food, and that you dry them well after cleaning.
If there are small marks, you can gently rub the blade with a jex pad.
SHARPENING
In order to keep your knife in perfect cutting condition, it is necessary to sharpen it regularly. Indeed, well-sharpened knives make it possible to work with more pleasure and efficiency, and to carry out, beyond simple cutting jobs, more meticulous decoration work.
A knife that is used regularly should be sharpened regularly. The friction of a cutting edge on a dish or a plate mechanically causes dulling of your knife. This is normal.

STORAGE
We recommand you to store your Déglon knife safely way from the reach of children.
Avoid loose storage in drawers to prevent injury or damage to the blade. We suggest you use one of our magnetic holders.
HOLDING OF KNIVES
We advise you to hold your knife by the handle with flexibility and firmness, so that the blade faithfully follows the impulses and gestures of the hand, for a safe and more precise job. Do not place your index finger on the back of the blade, to prevent the handle from turning and the blade from "ripping", at the risk of cutting.
Avoid greasy or wet hands and handles: carefully wipe your knife from the back (sharp on the outside).
In case of boning work, use protective mesh gloves and protective vests.
LIFETIME GUARANTEE
At Déglon, each blade is subject to grinding and polishing very specific to its function and use (flexible blade for a filleting knife, thicker and stiffer blade for a boning knife, etc.).
The care taken in the choice of materials, the quality of the machining, the assembly and all the finishing operations, makes each knife a reliable tool and guaranteed for life against any manufacturing defect (in the context of used under normal conditions).
