These utensils are used to remove the spinal cord from ovine and caprine.
For specialised work, a complete kit including:
– 3 plastic rods of different diameter for taking the spinal cord cleanly out of spinal canal of each piece (fillets, neck, rack). The rod flexibility can adapt to any straightness defect of carcass pieces.
– 1 scraper knife with rounded blade is used to scrape the spinal canal after splitting and to remove remaining marrow.
– 1 container for cleaning, disinfecting and decontaminating tools.
