The cooks’ favorite knife.
Very technical with its 17-20 cm narrow, flexible and pointed blade, it is used for filleting fish easily, engraving chive, shallot, peeling oranges.
The fine and narrow blade is also used for cutting out, without damaging it, cooked foie gras.
